You can buy short ribs from your local butcher or online. With local butchers, you can ask them to cut the ribs into your preferred size.

How to Make Low Carb Short Ribs Using an Instant Pot
Prepare the ribs by rinsing them and patting dry with a paper towel. Remove the thin layer of skin from the back of the ribs with a sharp knife.
Combine all dry spices in a bowl and mix well.
Rub the ribs with the dry spice mixture by massaging it into the meat and coating all sides.
Add water and apple cider vinegar to the instant pot. Put a trivet inside and arrange the ribs on top.
Close the lid and set to “seal.” Press “pressure cook” or “manual” and cook for 23 minutes on high. Some people might cook a little longer to achieve fall off the bone braised short ribs.
When done, allow the pressure to release naturally for 10 minutes then do a quick release.
Transfer ribs to a baking tray and brush with keto-friendly BBQ sauce or olive oil. Broil for 3 to 5 minutes or until slightly crisp. Serve warm!

- 1,5-2 lb beef ribs cut into sections
- ¾ cup water
- ¼ cup apple cider vinegar
- 3 tbsp olive oil or ⅓ cup keto-friendly barbecue sauce (optional)
For Dry Rub:
- 1 tsp So Nourished Erythritol
- 1 tsp dried parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp paprika
- ¼ cayenne pepper
- ½ chili flakes
- 1 ½ tsp sea salt
- 1 tsp black pepper ground
Instructions
- Rinse ribs and pat dry. Remove the thin membrane from the back of the ribs if needed.
- In a small bowl, combine all spices for the dry rub and mix well.
- Coat the ribs with the dry rub and massage it into the meat.
- Pour water and apple cider vinegar into the instant pot. Place a trivet inside and arrange ribs on top.
- Close the lid and set the valve to “seal.” Hit “pressure cook” or “manual” and cook for 23 minutes on high pressure.
- When finished cooking, release the pressure naturally for 10 minutes and do a quick release of the remaining pressure.
- Open the lid and transfer ribs onto a baking tray lined with foil. Brush with BBQ sauce (optional) or olive oil (if you don’t want to use BBQ sauce) and broil for 3-5 minutes or until slightly charred.
- Serve and enjoy!
