Today I have a delicious dish for you that will be appreciated by all lovers of both Chinese and Mediterranean cuisine. It’s called keto shrimp fried rice with riced cauliflower.

This keto shrimp fried cauliflower rice is very easy to make, just like my other keto chicken fried rice recipe.

Shrimp is a delicious and healthy source of protein on any diet. Also, shrimp is an excellent source of omega 3 fatty acids and it contains vitamin B12, selenium, and also antioxidants, which increase the body’s immunity.

There are many keto shrimp recipes you can make. They are relatively simple to cook because you don’t need a lot of time to prepare shrimp compared to meat and fish.

Instead of white rice, I use cauliflower. To be more specific, I make rice from cauliflower. This is a lot healthier than rice and has a lot less amount of carbohydrates.

Cauliflower is a cruciferous vegetable, which has sulfur-containing compounds that have been shown to protect against cancer, neurodegenerative disorders, cancer, and diabetes. They also have antiviral and antibacterial properties to support a healthy immune system (1).

Additionally, natural organosulfur compounds (OSC) found in cruciferous vegetables have antioxidant properties that help reduce inflammation. They also have anti-aging, antiplatelet, and fibrinolytic properties to prevent blood clotting and support various health benefits (2).

You can make many keto rice recipes using cauliflower.

Eggs, in this recipe, are a source of extra protein and healthy fats. Be sure to add this ingredient to your diet because of the minerals iron, phosphorus, iodine, and selenium. Egg yolks are also an excellent source of vitamin D, which helps protect heart health and boost your immune system (3). Vitamin D deficiency has also been linked to autoimmune disorders (4).

I also added garlic and ginger to this dish, which are known for their properties to accelerate metabolism and enhance immunity. In addition, they add a special flavor and piquancy to the dish.

I also added a shallot onion to the recipe, which has a very delicate taste and aroma. Also, it contains a lot of vitamin C and minerals.

How to Make Low Carb Cauliflower Shrimp Fried Rice

Use a food processor to shred the cauliflower until you obtain the rice-sized pieces. Drain the riced cauliflower well and set aside.

In a frying pan over medium-high heat, add olive oil in and fry bacon. Once it becomes crispy, remove and chop into small pieces. Set aside.

Use the same pan to make scrambled eggs. Remove and set aside.

In the same pan, add some extra olive oil (or sesame oil) in and fry shrimp with salt and pepper. Stir occasionally until the shrimp become pink. Remove and set aside.

In the same frying pan, add olive oil in then add ginger and garlic. Saute for 30 seconds until they release an amazing smell. Add cauliflower rice in and stir well. Cover with a lid and cook on low for 6-8 minutes.

You can also cook without the lid on, just make sure to stir well to avoid the cauliflower getting burnt at the bottom.

Finally, add bacon, shrimp, scrambled egg, chopped scallions, and coconut aminos (or soy sauce if not strict keto) in. Mix well. Sprinkle with extra salt and pepper if needed. Serve immediately.

Ingredients

  • 1 cauliflower medium head
  • 1/2 lb shrimp cooked or raw, peeled and deveined
  • 2 oz bacon fried and chopped
  • 2 eggs beaten
  • 1 tbsp ginger minced
  • 1 clove garlic minced
  • 2 scallions medium size, chopped
  • 3 tbsp olive oil divided
  • 1 1/2 tbsp coconut aminos
  • salt and pepper to taste

Instructions

  • Cut the cauliflower into florets and pulse in a food processor until you get rice-sized pieces. Drain well and set aside.
  • In a frying pan heat olive oil, fry bacon until crispy then chop the bacon into small bits. Whisk eggs and cook in the same pan to make scrambled eggs.
  • Heat one more tablespoon of olive oil and fry shrimps, stirring occasionally, for 1-2 minutes, season with salt and pepper.
  • Heat a tablespoon of olive oil in the frying pan, add ginger and garlic, and cook for 30 seconds. Add cauliflower rice, cover with a lid and cook on low for 6-8 minutes. Stir in bacon, shrimp, egg, chopped scallions, and coconut aminos. Season with salt and pepper if needed.
  • Serve immediately.
