Keto Mexican Avocado Shrimp Cauliflower Rice Bowl

If you’re missing Mexican burrito rice bowls, then you’re in the right place. Today I will cook a low-carb shrimp rice bowl with avocado topping, which is a perfectly quick and healthy lunch or dinner. 

This Mexican shrimp bowl recipe is delicious, nourishing, and most importantly, it’s low carb and you can enjoy it without feeling guilty or bloated. 

Traditional rice bowls are full of beans and rice. Even a small serving of these ingredients can make you feel bloated, and might kick you out of ketosis.

The base of the rice bowls is, of course, rice. As you know, rice contains a lot of carbohydrates. So to make the low-carb rice bowl, I will use cauliflower rice instead.

Also we’ll need shrimp, bell pepper, avocado, spinach and lime. The thing that ties all ingredients of our Keto Mexican Shrimp Rice Bowl together is creamy parsley lime dressing. And do not be afraid to replace any of the ingredients with your favourite ones as long as they are low-carb!


How to Make Low Carb Shrimp Avocado Rice Bowl

Start by making your dressing. Simply add sour cream, lime juice, parsley, garlic flakes, and a pinch of erythritol to the food processor. Season with salt and pepper and blend until homogeneous.

Heat olive oil in a frying pan and add shrimp, garlic flakes, red pepper flakes, cumin, season with salt and pepper. Cook 2-3 minutes per side.

Prepare the cauliflower rice according to the package instructions and divide it between bowls. If you make cauliflower rice from scratch, simply process cauliflower florets into small grain-sized pieces then cook using a microwave or frying pan.

Top each bowl with avocado slices, pepper chunks, chopped spinach and cooked shrimps. Pour prepared creamy dressing on top and serve with a lime wedge.

Ingredients

  • 1 cup cauliflower rice cooked
  • ½ lb shrimp
  • ½ bell pepper cut into chunks
  • ½ avocado sliced
  • ½ tsp garlic flakes
  • ¼ tsp red pepper flakes
  • ½ tsp cumin
  • 1 tbsp olive oil
  • 1 cup spinach chopped
  • lime wedges optional
  • salt and pepper to taste

For dressing:

  • ½ cup sour cream
  • ¼ cup parsley
  • ½ tsp garlic flakes
  • 1 tbsp lime juice
  • pinch erythritol optional
  • salt and pepper to taste

Instructions

  • Make a dressing: in a food processor combine sour cream, parsley, garlic flakes, lime juice, erythritol, salt and pepper and blend until homogeneous.
  • Heat olive oil in a frying pan, add shrimp, garlic flakes, red pepper flakes, cumin, season with salt and pepper and cook 2-3 minutes per side.
  • Divide cauliflower rice between bowls. Top with avocado slices, pepper chunks, chopped spinach and cooked shrimps.
  • Drizzle with dressing.
  • Serve with lime wedge and enjoy!
