We love pancakes since we were kids. They are always one of our most favorite foods for breakfast. On keto diet, you can still have pancakes but you need to use different ingredients to make it low carb.

This recipe is flavorful because we combine different types of flour and tastes. We will be using almond flour, flaxseed meal and a little bit of coconut flour.

Keto Almond Flour Flaxseed Pancakes

If you have flax seed but you don’t have flaxseed meal, don’t worry. It is very easy to prepare. Simply place flax seed in the food processor or the blender and blend for three minutes until it becomes flour.

The initial texture of the batter mixture does not look nice but the result of the pancakes is impeccable in presence, taste and texture. They are fluffy and delicious.

Instructions
  1. Mix all the dry ingredients together. In a bowl add almond flour, flaxseed meal, coconut flour, baking powder, sweetener (optional), cinnamon and salt. Mix well and set aside.
  2. Separate egg whites and yolks. With the mixer, beat the egg whites until they form peaks.
  3. In another bowl mix the liquid ingredients: Add melted butter, 2 tbsp of melted coconut oil, egg yolks and almond milk. Mix well then slowly add dry flour mixture and beat it. Finally, incorporate the egg whites and mix well.

  4. In a non-stick frying pan, use the remaining coconut oil (3 tbsp) to cook the pancakes. The pancake mix should be enough to make 7 3-inch pancakes and the coconut oil should be enough to cook these pancakes. When making pancake, you want to cook them one by one to make it easy to turn over and avoid breaking them.
