If you’re bored with traditional low-carb pancakes, then use this recipe to spice things up. It’s sweet and savory at the same time, and will fill you up all morning long without crashing.

This recipe is similar to the Russian syrniki pancake you might have seen before except we use coconut flour instead of regular flour. This is a quick and easy recipe for the entire family to enjoy.  It only takes three ingredients to make. You can make a batch of about 10 – 12 pancakes using the recipe below.

Farmer cheese is pressed cottage cheese. It’s also known as an unripened cheese. Alternatives may include goat cheese, Ricotta, creamed cottage cheese or paneer.

One serving size (30g) of farmer cheese 40 calories, 2.5g fat, 4g protein and almost 0 carbs.

You can add any type of keto-approved sweetener to the mix to make it taste sweet. The coconut flour gives it a nice brown color and a satisfyingly crunchy bite on the outside.

Coconut flour is also an excellent source of fiber and anti-inflammatory fats. This recipe can be used as a snack in between meals. You can omit the sweetener and use the pancake base as a creative sandwich bread. Then add your favorite fillings and toppings. There is no wrong way to eat these pancakes!

Combine everything in a bowl and fold thoroughly until well-combined and forms a mixture similar to paste.

Make round pancakes with the batter. Sprinkle some more coconut flour on top.

Pan fry the pancakes, flipping until both sides turn golden brown. Garnish with blueberries or your favorite toppings. Serve.

  • Form pancakes into round shape. Dust it just a bit with coconut flour
  • Fry till both sides are golden brown
  • Can be served with blueberries or any topping of your choice.
