This recipe is similar to the Russian syrniki pancake you might have seen before except we use coconut flour instead of regular flour. This is a quick and easy recipe for entire family to enjoy.  It only takes three ingredients to make.  You can make a batch of about 10 – 12 pieces using the recipe below.

Farmer cheese is pressed cottage cheese, also known as an unripened cheese. Alternatives can be goat cheese, Ricotta, creamed cottage cheese or paneer.

1 serving size (30g) of farmer cheese 40 calories, 2.5g fat, 4g protein and almost 0 carbs.

You can buy farmer cheese from cheese and dairy stores, grocery store or online such as this Friendship Farmer Cheese.

Combine everything in a bowl and fold thoroughly until well-combined and forms a mixture similar to paste.


Make round pancakes with the batter. Sprinkle some more coconut flour.

Pan fry the pancakes, flipping until both sides turn golden brown. Garnish with blueberries or your favorite toppings. Serve.

Russian syrniki pancake

You can add any type of keto-approved sweetener to the mix to make it taste sweet. The coconut flour gives it a nice brown color and a satisfyingly crunchy bite on the outside.

  • Mix farmer cheese, coconut flour, salt and 2 eggs. Mixture should be like paste texture.
  • Form pancakes into round shape. Dust it just a bit with coconut flour
  • Fry till both sides are golden brown
  • Can be served with blueberries or any topping of your choice.
