  • 1 pound shrimp peeled and deveined
  • 2 tbsp butter
  • 1 cup cream cheese
  • 2/3 cup fresh grated Parmesan cheese
  • 2 cloves garlic crushed
  • 1/2 onion finely chopped
  • 3 cup baby spinach leaves
  • 2 tsp Italian seasoning
  • 1 tbsp fresh parsley chopped
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/4 cup sun-dried tomatoes (optional)
  • salt and pepper to taste

Instructions
  1. Devein and clean shrimp then season with lemon juice, salt, black pepper and garlic powder in a bowl.
  2. Heat a large frying pan over medium-high heat. Add butter in with chopped onion, garlic and sun-dried tomatoes (optional).
    Saute garlic, onion in butter
  3. Stir for 30 seconds then add shrimp in and stir for 3 minutes until the shrimp turn pink.
  4. Add cream cheese in and stir gently with a spoon until the cream cheese is dissolved.
    Add cream cheese spinach
  5. Finally, add Parmesan cheese, spinach, and Italian seasoning. Cook 5 minutes more and remove from heat.
  6. Serve with freshly chopped parsley on top.
