Cheesy White Chicken Chili Keto Soup

This white chicken chili is a very delicious chicken soup. Its low carb version is also very quick and easy to prepare.

We use chicken breast for this recipe and we cut it into small cubes. You can use shredded chicken breast if you want to. You can even use beef, pork or shrimp instead of chicken. The recipe will be the same and you try different meat flavor.

You can also add cream cheese and sour cream or coconut cream to thicken the soup.

To keep it quick and simple, we prepare this soup in a saucepan. You can use a crockpot as well if you prefer the slow cook method.

Instructions
  1. Chop onion and chili pepper into small pieces (brunoise cut). Cut the chicken breast into small bites and marinate with salt and pepper. Set aside.
  2. Cut the cauliflower into very small pieces and cook them in the microwave with 1/4 cup of water for 3 minutes. You can stir them in a pan if you don’t want to use the microwave. Set the cooked cauliflower aside.
  3. In a medium saucepan, add olive oil in and cook the diced chicken breast until lightly browned.
  4. Add the chicken broth in and bring to a boil. Add the onion and garlic in. Cook for 5 minutes and then add the cauliflower and chopped chili pepper.
    Add cauliflower, cheese, broth
  5. Finally add cheese and continue stirring for 5 minutes until the cheese is melted. Add salt and pepper to taste. Add extra water for desired thickness. For more flavor, you can add a little bit of ground cumin,dried oregano, cayenne pepper and coriander (optional). Serve in a soup bowl and enjoy!
