How to Make Low Carb Beef Chili
Prepare all the ingredients before starting to cook:
Mince the garlic cloves. Chop the onion finely.
Remove the seeds from the chipotle chili (can be pickled, dried or fresh chili peppers), and cut up in little squares.
Turn the stove on medium-high heat. Pour olive oil in a large cooking pot (large enough to add all the ingredients).
When the oil is hot, add garlic and onion and sauté until it is soft (about 1 minute).
Add ground beef in and saute with salt and pepper. Cook it for about 8 minutes until the beef is browned.
Then add the chopped chipotle pepper in and mix very well. Proceed to add the tomato paste (or marinara sauce), beef broth and the rest of the spices. Add more salt if needed.
Let the mixture boil then turn the heat to minimum and let simmer for 20 minutes and stir occasionally. Add more water if needed.
Once done, serve with a low carb salad or leafy greens. Add cilantro, cheddar cheese and sour cream on top (optional).

FAQ and Cooking Tips
What is a good beef for chili?
A good beef for chili is chuck roast or ground beef, as they are flavorful and become tender when slow-cooked. I use ground beef for this recipe because it is much easier and quicker to prepare this meal.
What is the difference between chili and chili con carne?
Chili generally refers to a spicy stew containing chili peppers, meat, and often tomatoes and beans. “Chili con carne,” which translates to “chili with meat,” specifically emphasizes the inclusion of meat, traditionally beef, in the dish, distinguishing it from vegetarian or bean-only versions.
How do you increase the flavor of beef in chili?
To enhance the flavor of beef in chili, brown the ground beef thoroughly before adding other herbs and spices ingredients, use beef broth or bone broth instead of water, incorporate umami-rich ingredients like tomato paste, soy sauce, and let the chili simmer for an extended period to meld the flavors.
Does chili get better the longer it cooks?
Yes, chili often improves in flavor the longer it cooks, as the extended simmering allows the ingredients to meld together and develop a deeper, richer taste. When simmering, make sure you have enough water or bone broth so it doesn’t burn. Another way I think you can try is to allow the chili rest or refrigerating it overnight which can further enhance its flavors, making it even more delicious when reheated the next day.
What to serve with beef chili on keto?
On a keto diet, you can serve beef chili with low-carb sides such as cauliflower rice, keto-friendly cornbread, a fresh green salad, sliced avocado, or topped with shredded cheese and sour cream.
How to store leftover beef chili
You can store leftover beef chili in an airtight container in the refrigerator for up to 3 days. You can also freeze the chili for up to 2-3 months for longer storage. Before storing, make sure you let the chili to cool to room temperature.
