How to Make Low Carb Avocado Green Omelette
Add eggs, spinach, and turmeric to a blender. Blend until you have a smooth, green mixture.
Heat the coconut oil in a frying pan over medium heat.
Pour the egg mixture into the pan. Cook for 2-3 minutes, or until the bottom is set and slightly golden.
Carefully flip the omelette and cook for another 1-2 minutes.
Place the omelette on a plate. On one half, lay out the avocado slices and add a few spinach leaves for extra greens.
Fold the other half of the omelette over the avocado and spinach.

Keto Green Omelette with Avocado
Ingredients
- 2 whole eggs
- 1/2 cup spinach (15g)
- 1/2 tsp turmeric
- 1 tsp coconut oil
- 1/2 avocado sliced
- salt and pepper to taste
Instructions
- Crack the eggs into a blender. Drop a handful of spinach in and add the turmeric. Blend everything until the mixture is smooth.
- Set a frying pan over medium heat and pour in some coconut oil. When the oil is heated, fry the egg mixture for 2-3 minutes. Flip the egg and fry for another 1-2 minutes.
- Set the omelette in a plate. Put some sliced avocado and a couple of spinach in one side, then fold the other side on top of the avocado and spinach filling. Season with some salt and pepper before serving. Enjoy!
