Chocolate mousse is a very simple and quick dessert recipe you can prepare in many ways. For this particular keto coconut milk chocolate mousse recipe, I used unsweetened coconut milk, unsweetened cacao powder, half an envelope of unflavored gelatin, a little bit of sweetener, cinnamon and coconut flakes for topping.
You can buy the coconut flakes in the supermarket or online. I actually used raw and fresh coconut flakes from the actual coconut because it’s available in my home town.
If you have access to fresh coconut fruit, you can use a stainless steel coconut meat removal to remove the meat from the coconut shell, then slice the meat into small pieces as I did in this recipe.
How to Make Low Carb Coconut Milk Chocolate Mousse with Coconut Flakes Topping
In a bowl, add 4 tablespoons of hot water and dissolve the gelatin. Gelatin is a great ingredient to make sweets and desserts on keto. I made keto gummies using it as well.
In a separate mixing bowl, combine coconut milk, cacao powder, cinnamon, and erythritol. Add the dissolved gelatin to this mixture. I used sugar alcohol – erythritol – for this sugar free chocolate mousse, but you can use stevia or monk fruit instead.
Using a whisk or an electric mixer, blend until the mixture is smooth and creamy.
Transfer the mixture to serving dishes and refrigerate for 1-2 hours, or until set.
Before serving, garnish with coconut flakes. Best enjoyed chilled.
