If you are looking for a substitute for potato hash browns, riced cauliflower hash browns are a great option. This is a healthier version of regular hash browns and it’s very similar to cauliflower tortillas.

To make these keto cauliflower hash browns, we only need 3 main ingredients: raw cauliflower, egg and almond flour.

To season it, I used a little bit of onion powder, kosher salt, black pepper, garlic powder, and green onions. You can also add some cheddar cheese and butter in the mixture.

These low carb hash browns can be served hot. You can also keep them in the refrigerator for a quick breakfast or dinner with your choice of meat.

This recipe is so easy to prepare. Simply grate the cauliflower to make riced cauliflower then mix it will all other ingredients and fry it in a skillet. You can form rectangular shape or circular shape, it’s up to you.

How to Make Low Carb Hash Browns

Prepare the Cauliflower: Start by washing a small head of cauliflower. Dry it thoroughly, remove the leaves, and chop it into small pieces.

Make Cauliflower Rice: Put the chopped cauliflower in a food processor. Pulse it until the pieces are about the size of rice grains.

Soften the Cauliflower Rice: Transfer the cauliflower rice to a microwave-safe bowl. Microwave it for 1 minute to soften.

Mix Ingredients: In a large bowl, combine 2 large eggs, 1/2 teaspoon of onion powder, 1/4 teaspoon of garlic powder, 2 tablespoons of almond flour, 2 tablespoons of chopped green onion, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of black pepper. Add the softened cauliflower rice to this mixture. Stir everything together until it’s well mixed.

Mix Cauliflower with other ingredients

Cook the Hash Browns: Heat 2 tablespoons of coconut oil in a non-stick skillet over medium-high heat. Once the oil is hot, spoon the cauliflower mixture into the skillet to form hash brown shapes. Flatten them slightly with a spatula.

Fry the Hash Browns: Cook each hash brown for about 4-5 minutes on one side. Then, carefully flip them over with a spatula and cook for another 4-5 minutes on the other side, or until they are golden brown and crispy.

Serve: Once cooked, remove the hash browns from the skillet and place them on a plate. They can be enjoyed warm or at room temperature.

  • Rinse the cauliflower thoroughly with water. Dry completely. Discard the leaves and chop into little portions.
  • Transfer the chopped cauliflower in a food processor and pulse until you get rice-size pieces.
  • Pour the cauliflower rice in a heat-safe bowl and leave in the microwave for a minute, enough to make the rice soft.
  • Place all the remaining ingredients in a bowl. Mix in the cauliflower. Stir with a spoon until the mixture is uniform.
  • Set a non-stick skillet over medium-high heat. Heat the coconut oil in the pan and gently pour the mixture in and shape it into your desired shape.
  • Fry for around 4-5 minutes. Use a turner flipper to turn the hash browns over gently.
  • Remove from the heat once cooked then serve in a plate.
  • Enjoy warm or at room temperature.

Notes

We made 6 hash browns out of the ingredients. Obviously the number depends on the size and thickness that you prefer.
