  • 1/2 avocado sliced
  • 1/2 tsp turmeric
  • 1 tsp coconut oil

Instructions
  1. Break eggs into a blender, add 1 handful of spinach, turmeric and blend together until homogeneous.
  2. Heat coconut oil in a frying pan over medium heat. Pour egg mixture and cook for 2-3 minutes on one slide, then flip and cook for 1-2 minutes more.

  3. Transfer the omelette to a plate, add the handful of spinach and sliced avocado onto one half of the omelette, then fold the omelette in half, sprinkle with salt and pepper and enjoy!
