- 2 whole eggs
- 1/2 cup spinach (15g)
- 1/2 tsp turmeric
- 1 tsp coconut oil
- 1/2 avocado sliced
- salt and pepper to taste
Crack the eggs into a blender. Drop a handful of spinach in and add the turmeric. Blend everything until the mixture is smooth.
Set a frying pan over medium heat and pour in some coconut oil. When the oil is heated, fry the egg mixture for 2-3 minutes. Flip the egg and fry for another 1-2 minutes.
Set the omelette in a plate. Put some sliced avocado and a couple of spinach in one side, then fold the other side on top of the avocado and spinach filling. Season with some salt and pepper before serving. Enjoy!
