  • 2 slices bacon cooked, chopped

  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/8 tsp salt

Instructions
  1. Preheat oven to 350 F.
  2. In a bowl mix salt, pepper and dried herbs and season both sides of chicken thighs with this mixture. Heat olive oil on medium-high heat in a large skillet. Add chicken thighs skin-side down, cook for 5 minutes until nicely browned.
    Season both sides of chicken thighs
  3. Transfer chicken thighs, skin side up, to the baking sheet and bake at 350 F for about 20 minutes or until completely cooked through.

  4. Make the mushrooms sauce: Meanwhile, heat olive oil in a skillet on medium heat. Add sliced mushrooms and chopped bacon and cook on medium heat for about 3 minutes.

  5. Add heavy creamy, dried thyme, salt and bring to boil, stir, immediately reduce to simmer and cook for about 2 minutes on very low heat.

  6. When chicken is done, add cooked chicken thighs to the skillet and spoon the sauce and the mushrooms on top of chicken thighs.
