Bacon Wrapped Mini Meatloaf

This mini bacon wrapped meatloaf recipe is a delicious and convenient dish that can be eaten for lunch, dinner and even breakfast! It’s filling, satisfying and can be made ahead and kept in the freezer for a quick home-cooked solution to emergency meals.

Each individual meatloaf is made with well-seasoned ground beef mixed with shredded veggies and cheese. It is wrapped with bacon and topped with ketchup (preferably homemade sugar-free ketchup).

Once you prepare the meatloaves, just simply bake them in the oven for 20-30 minutes and just let the oven do all the work!

Instructions
  1. In a bowl combine ground beef, finely shredded zucchini, finely grated cauliflower, chopped parsley, egg, mayo, mustard, shredded cheese. Mix well. Add salt and spices of your choice.

  2. Form balls and wrap a slice of bacon around it. Top each portion with one tsp of ketchup.

  3. Put in a preheated 375F oven for 20-30 min (or depends on a size). Once done put on broil for a few min to give it a nice crust.
  4. Serve with radish and cucumber salad. Enjoy.
