How to Make Low Carb Zucchini Spread

To make, grate the zucchini, add some salt, and mix well. Let the zucchini sit for about 10 minutes then squeeze to remove moisture.

In a frying pan, add olive oil (or butter) in then add minced garlic and thyme and fry for about 30 seconds.

Add zucchini and cook it, but do not overcook, or else it will turn mushy.

Add cream cheese, salt and pepper and cook for 3-5 minutes until all flavors are combined.

Transfer the mixture to a plate and sprinkle with grated Grana Padano.

If the dish does not seem quite complete, serve with some low-carb crackers. Bon appetit!

Ingredients

  • 2 zucchini medium, shredded
  • 3 oz cream cheese
  • 1 tbsp Grana Padano grated
  • 1 tsp fresh thyme chopped
  • 1 clove garlic minced
  • 1 tbsp olive oil or butter
  • Salt and Pepper to taste

Instructions

  • Grate the zucchini, place in a bowl, sprinkle with a pinch of salt, and mix well. Let the zucchini weep for at least 10 minutes.
  • Transfer to a cheesecloth or kitchen towel and squeeze to remove moisture.
  • Heat olive oil in a frying pan over a medium heat, add minced garlic and fry for 30 seconds. Add shredded zucchini and thyme and cook for 15 minutes, stirring occasionally.
  • Add cream cheese, season with salt and pepper and cook for 3-5 minutes more.
  • Transfer to a plate, sprinkle with grated Grana Padano, serve with some low carb crackers (if desired) and enjoy.
