Instructions
  1. Chop the onion in brunoise and chop the bacon and mushrooms into small slices.

  2. Spray 8-inch (20 cm) non-stick skillet with cooking spray. Heat over medium-high heat and add the bacon and onion. When the bacon is toast add the mushrooms and remove.

  3. Crack the eggs into a mixing bowl with a pinch of sea salt and black pepper and add the other ingredients (bacon, onion and mushrooms).

  4. Pour in eggs mixture, when the omelette begins to cook and firm up, using a spatula, ease around the edges of the omelette. Cover half of omelette with Cheddar Cheese, fold over onto filled half.

  5. Cook two more minutes and then slide omelette onto a plate.
  6. You can put the lettuce inside the omelette and serve immediately while it's still crispy like Vietnamese pancakes.
