What do you know about a sandwich? Bread, butter, carbs, fats, calories… But not this one! Normally, bread makes you feel bloated and weighed down. It also gives you brain fog and makes you want to take a nap.

But the ingredients in my keto cloud bread recipe will leave you feeling as light as a cloud! It will also give you energy to last throughout the day.

This low carb cloud bread sandwich features a delicious filling made with bacon, avocado and homemade mayo. Avocado is a nutrient-dense fruit. It contains lots of vitamins and minerals, especially potassium. It’s also a great source of anti-inflammatory monounsaturated fat.

The dough of the bread calls for eggs and cream cheese as the base. It’s light, yet filling, and it will support your keto needs. You’ll want to be sure to buy eggs that are organic and pasture-raised.

This means that the chickens they come from have had access to sunshine and fresh pastures. These eggs tend to contain higher amounts of omega 3 fatty acids. 

You’ll want to separate the egg yolk from the egg whites to make the dough. Beating the egg whites until they form stiff peaks is an important step. This allows the cloud bread to take a cloud form. 

You can fill your cloud bread with anything you like, but I think the combination of homemade mayo, bacon and avocado is unbeatable.

Making your own homemade mayo allows you to sidestep the cheap vegetable oil and sugar added to store brand kinds.

These pieces of cloud bread are simply delicious with almost zero carb and high in protein. You can use it to make sandwich by adding smoked salmon, bacon, ham, avocado, lettuce, cheese, tomato or any filling of your choice. Follow these easy steps to make your new favorite sandwich!


How to Make Low Carb Cloud Bread

To make, add the egg yolks, cream cheese, baking powder and a pinch of salt to a bowl. Mix to combine.

In a separate bowl, beat the egg whites until stiff peaks form. Then gently combine both mixtures.

Spoon the batter into eight circular batters.

Bake 25-30 minutes or until lightly golden. See the clouds? Golden clouds, of course.

Spread homemade mayo on each cloud bread, top with sliced avocado, bacon slices, close the sandwich with another cloud bread.

Ingredients

For cloud bread:

  • 4 egg yolks
  • 4 egg whites
  • cup cream cheese
  • ½ tsp baking powder gluten-free
  • pinch salt

For filling:

Instructions

  • Preheat the oven to 300 F.
  • In a bowl beat egg yolks with cream cheese, baking powder and a pinch of salt.
  • In another bowl, beat egg whites until stiff peaks form.
  • Add egg yolks mixture to the beaten egg whites and mix gently until smooth.
  • Line a baking tray with parchment paper or foil.
  • Spoon the batter onto baking tray to make 8 circular batters and bake 25-30 minutes or until lightly golden. Cool for several minutes.
  • Spread half of baked cloud breads with mayo, top with sliced avocado, bacon slice, close the sandwich with another cloud bread and enjoy!
