Eggs and Asparagus Breakfast Bites

The eggs & asparagus breakfast bites are an excellent breakfast (or brunch) dish – they’re easy to prepare and are also filling. The recipe can be easily modified – you can substitute the asparagus with another vegetable, i.e. spinach or mushrooms. You can also cook a bigger batch for the next 2-3 days and store them in the fridge (double or triple the amounts of each ingredient, as needed). Of course, you can also eat this dish for lunch or for dinner.

  • 40 g shredded cheddar cheese
  • 1 tbsp coconut flour
  • 100 g asparagus fresh or canned
  • 1 tbsp butter melted
  • ¼ tsp baking powder

Instructions
  1. If you are using fresh asparagus, cut it in pieces of approx. 2 cm and fry it for about 5 minutes in a bit of butter. If you’re using canned asparagus, you only need to cut it but you don’t need to fry it.
  2. Mix together the eggs, cream cheese, shredded cheddar cheese, coconut flour, baking powder, salt and melted butter. Let it sit for 10 minutes.

  3. Spray lightly a bit of oil on the baking moulds that you’d like to use and put the asparagus in them. After that pour the mix on top of it. Remember that the mix will expand when baked, so don’t fill the moulds completely.

  4. Bake for about 20 minutes by checking from time to time if it’s ready.
  5. Enjoy!

The coconut flour and the baking powder give these egg bites a fluffy texture, but you can also do them without these two ingredients. They will be flatter, but will be still as tasty. Instead of butter, you can use coconut virgin oil, or another cooking oil.
