Begin by taking your walnuts and breaking them down into small pieces with the help of a food processor. Once you’ve achieved the desired consistency, set the walnuts aside.
Next, gather all the remaining ingredients except for the shredded coconut and chocolate chips and place them into a large mixing bowl. Now, add the crushed walnuts into the same bowl. Thoroughly knead the mixture, ensuring all components are well incorporated. During this process, taste the mixture and add a pinch of salt if needed to enhance the flavors.
Prepare an 8×8-inch baking pan and transfer the dough into it. Using a flat spatula, press down on the dough to spread it evenly across the pan, creating a smooth surface.
For the chocolate topping, place the chocolate chips in a microwave-safe container and heat them in the microwave for about 1 minute. If they’re not completely melted, you can extend the time for an additional 30 seconds. Once melted, take the chocolate out and pour it over the prepared dough. Use the spatula again to smooth out the chocolate, ensuring an even layer.
Now, take the shredded coconut and liberally sprinkle it over the chocolate layer. Don’t hesitate to add a generous amount as it will contribute to the overall flavor and texture of the bars.
Once the assembly is complete, put the pan into the refrigerator and let it chill for 1 to 2 hours, or longer if necessary, until the chocolate and dough are fully set and firm.
After the chilling time has elapsed, remove the pan from the fridge. Cut the set mixture into squares or rectangular bars, according to your preference. Your homemade bars are now ready to be served and enjoyed at your leisure.

Keto Chocolate Chip Cookie Bars
Ingredients
- 1 cup walnuts
- 1/8 cup coconut flour
- 1/4 cup almond flour
- 1 tsp Stevia or any keto-approved sweetener to taste
- 1 stick butter
- 1/2 cup chocolate chips Sugar free
- 1/4 cup shredded coconut
- 1/8 tsp salt to have a salty sweet taste, optional
Instructions
- Place the walnuts in a food processor and crush to pieces.
- Combine the walnuts with the rest of the ingredients (except the chocolate chips and shredded coconut). Add some salt to taste.
- Press the dough evenly on an 8×8 pan.
- Microwave the chocolate chips for one minute or one minute and a half to melt. Pour the melted chocolate over the pan.
- Sprinkle the grated coconut on top.
- Chill in the fridge for about 1 to 2 hours. Take out and slice into bars.
- Pick out a piece and enjoy.
