A good breakfast should be nutritious, filling, and it should also look appetizing. Cooking your breakfast in cups will give it an interesting appearance, good taste and flavor! Plus, they make great finger foods that can be transported with you as your day unfolds!

This recipe calls for ham and eggs. We recommend using fresh ham from your local butcher or buying clean sources of ham with no added sugars. Eggs should be pasture-raised and free of antibiotics. 

Ham is low in fat but will provide a good portion of protein. Eggs will add high-quality protein, riboflavin and selenium. 

Grana Padano supplies the same protein input as milk, but in a concentrated form. It will boost your daily intake of mineral salts, which form a vital part of a balanced diet, such as zinc, copper and phosphorus but, most importantly, calcium. 

Parsley is also a good source of minerals such as calcium, iron, magnesium, and potassium. Besides, the green colour of parsley stands for the color of life, renewal, nature, and energy.

To make, divide 12 ham slices between four muffin cups or ramekins. If you use ramekins, then be sure to brush with olive oil first.

Break an egg into each cup and season with salt and pepper.

Bake for 20 minutes or until the eggs are set and serve with grated Grana Padano and chopped parsley.

  • Preheat your oven to 350F.
  • Divide 12 ham slices between 4 muffin cups or ramekins (brushed with olive oil)
  • Break an egg into each cup, season with salt and pepper and bake for 20 minutes or until eggs are set.
  • Serve immediately sprinkled with Grana Padano and chopped parsley.

Notes

*You can also add some extra cheddar/mozzarella cheese on top when baking. Some veggies you can add are spinach, and tomato slices. Instead of breaking the whole egg into the cup, you can crack the egg into a bowl and beat it up then pour into the cup to make scrambled egg cups.
