Fish with vegetables can be a great way of ending a long day and starting romantic diner. The combination of fish and various types of low carb vegetables and herbs will make this a super healthy, delicious, and flavorful dish.

To make the fish even tastier, try marinating it beforehand in lemon juice and seasonings, garlic and ginger. If you’d like to, you can just leave it overnight in a fridge.
To make it looks more appealing, when choosing vegetables, go for as many different colors as possible. Low carb veggies choices such as zucchini, eggplant, bell pepper in various colors, broccoli, cauliflowers, etc…

Preheat the oven to 400F. In the meantime, chop all the veggies and cut the fish into small bite size to get them ready for cooking.
Add fish and veggies pieces into a baking tray lined with foil. Drizzle olive oil and spread butter pieces around the dish. Add salt, pepper and seasoning of your choice.
Fold the foil and make sure it’s fully covered. Bake this for about 40 minutes and serve.

Ingredients
- 1 lb cod or any white fish
- 1 red bell pepper sliced
- 6 cherry tomatoes halved
- 1 leek (small size, only the white part, sliced)
- 1/4 onion sliced
- 1/2 zucchini sliced
- 1 clove garlic chopped
- 2 tbsp olives
- 1 oz butter
- 2 tbsp olive oil
- 1/2 lemon sliced to taste
- coriander leaves to taste (optional)
- salt and pepper to taste
Instructions
- Preheat the oven to 400 F.
- Slice the zucchini, leek, onion, bell pepper and lemon, cut tomatoes in half, chop the garlic. Transfer all vegetables to a baking tray, lined with foil.
- Cut the fish into bite-sized pieces and add to the vegetables. Add salt and pepper, drizzle with oil and add pieces of butter around evenly.
- Fold the foil and make sure you folded the foil well at joints.
- Bake for 35-40 minutes and serve. Can be served with aioli or any other low carb sauce of your choice.
