Fish with vegetables can be a great way of ending a long day and starting romantic diner. The combination of fish and various types of low carb vegetables and herbs will make this a super healthy, delicious, and flavorful dish.

While cooking something in oven, you are always at risk of making the food too dry and gummy. Well, there is no need to be afraid with this recipe because you’ll cook the fish fillets in butter, oil and vegetables which will give the fish extra juice.

Baked Fish Fillets in Foil

You can use any type of fish for this recipe, preferably boneless and in fillets. Fish such as salmon, cod, barramundi, whiting, perch, etc… Or you can also use other seafood for this recipe such as shrimp.

To make the fish even tastier, try marinating it beforehand in lemon juice and seasonings, garlic and ginger. If you’d like to, you can just leave it overnight in a fridge.

To make it looks more appealing, when choosing vegetables, go for as many different colors as possible. Low carb veggies choices such as zucchini, eggplant, bell pepper in various colors, broccoli, cauliflowers, etc…

Be creative! You don’t have to follow this recipe to a T. You can add extra veggies, herbs and spices or simply work with whatever you have in your kitchen.

Perks of spending so much time cooking something like fish is that later you can reheat it and turn into something else. For example, to cover the same fish with vegetables with melted cheese is a new way to reconstruct yesterday’s diner for today’s lunch.

Preheat the oven to 400F. In the meantime, chop all the veggies and cut the fish into small bite size to get them ready for cooking.

Add fish and veggies pieces into a baking tray lined with foil. Drizzle olive oil and spread butter pieces around the dish. Add salt, pepper and seasoning of your choice.

Ingredients

  • 1 lb cod or any white fish
  • 1 red bell pepper sliced
  • 6 cherry tomatoes halved
  • 1 leek (small size, only the white part, sliced)
  • 1/4 onion sliced
  • 1/2 zucchini sliced
  • 1 clove garlic chopped
  • 2 tbsp olives
  • 1 oz butter
  • 2 tbsp olive oil
  • 1/2 lemon sliced to taste
  • coriander leaves to taste (optional)
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400 F.
  • Slice the zucchini, leek, onion, bell pepper and lemon, cut tomatoes in half, chop the garlic. Transfer all vegetables to a baking tray, lined with foil.
  • Cut the fish into bite-sized pieces and add to the vegetables. Add salt and pepper, drizzle with oil and add pieces of butter around evenly.
  • Fold the foil and make sure you folded the foil well at joints.
  • Bake for 35-40 minutes and serve. Can be served with aioli or any other low carb sauce of your choice.
