This mini bacon wrapped meatloaf recipe is a delicious and convenient dish that can be eaten for lunch, dinner and even breakfast! It’s filling, satisfying and can be made ahead and kept in the freezer for a quick home-cooked solution to emergency meals.

Each individual meatloaf is made with well-seasoned ground beef mixed with shredded veggies and cheese. It is wrapped with bacon and topped with ketchup (preferably homemade sugar-free ketchup).

Ingredients

  • 1 lb Ground beef
  • 1/2 cup zucchini shredded
  • 1/2 cup Cauliflower grated
  • 2 cloves garlic
  • 1/3 cup parsley chopped
  • 1 egg
  • 6 slices bacon
  • 1 tbsp Dijon mustard
  • 1 tbsp Mayonnaise
  • 1/2 cup Parmesan cheese shredded
  • 6 tsp ketchup preferably homemade sugar-free.

Instructions

  • Prepare a large bowl for the meatloaf. Add in all the ingredients, excluding the ketchup and bacon strips. Mix and season well to your liking. Stir with a spoon to incorporate.

  • Mold the meatloaf mixture to make small spheres. Wrap each bacon slice around each meatball. Spread a teaspoon of ketchup on the surface of the meat.

  • Let the oven preheat at 375°F. Place the baking sheet in the oven for 20-30 minutes. Time may depend on the size of the mini meatloaf. When the meat is cooked, set the oven to broil and leave for a couple of minutes to obtain a nice crust.
  • Transfer to a plate with a cucumber and radish salad.
