This mini bacon wrapped meatloaf recipe is a delicious and convenient dish that can be eaten for lunch, dinner and even breakfast! It’s filling, satisfying and can be made ahead and kept in the freezer for a quick home-cooked solution to emergency meals.
Each individual meatloaf is made with well-seasoned ground beef mixed with shredded veggies and cheese. It is wrapped with bacon and topped with ketchup (preferably homemade sugar-free ketchup).
Once you prepare the meatloaves, just simply bake them in the oven for 20-30 minutes and just let the oven do all the work!

A super easy and tasty mini meatloaf wrapped in bacon.

Ingredients
- 1 lb Ground beef
- 1/2 cup zucchini shredded
- 1/2 cup Cauliflower grated
- 2 cloves garlic
- 1/3 cup parsley chopped
- 1 egg
- 6 slices bacon
- 1 tbsp Dijon mustard
- 1 tbsp Mayonnaise
- 1/2 cup Parmesan cheese shredded
- 6 tsp ketchup preferably homemade sugar-free.
Instructions
- Prepare a large bowl for the meatloaf. Add in all the ingredients, excluding the ketchup and bacon strips. Mix and season well to your liking. Stir with a spoon to incorporate.
- Mold the meatloaf mixture to make small spheres. Wrap each bacon slice around each meatball. Spread a teaspoon of ketchup on the surface of the meat.
- Let the oven preheat at 375°F. Place the baking sheet in the oven for 20-30 minutes. Time may depend on the size of the mini meatloaf. When the meat is cooked, set the oven to broil and leave for a couple of minutes to obtain a nice crust.
- Transfer to a plate with a cucumber and radish salad.
