Cauliflower Rice

The cauliflower rice is the perfect side dish for many types of meat. It’s a very simple preparation and you can replace your regular rice with riced cauliflower. I have tried preparing it baked, boiled and in the microwave. The latter has a texture more similar to rice, so I prefer it.

Instructions
  1. Wash and thoroughly dry cauliflower, then remove all leaves and cut into small pieces.
  2. Put it inside the food processor and press the button several times with care, until it looks similar to rice grain size.
  3. Put cauliflower in a microwave-safe container, add in butter, salt and pepper and mix well then cook in a microwave using the "cooking" function for 1.5 - 2 minutes. Alternatively, you can stir-fry the cauliflower in a pan with butter, cumin powder, garlic powder, chopped onion, chilli pepper and seasoning if you don’t want to use the microwave.

  4. Serve warm and garnish with the parsley.
