There are many types of zucchini and summer squash. You can choose whichever type that you like. This dish is very simple to prepare. There are only 2 main things to do: spiralize the zucchini and saute the marinated shrimp. That’s it!

  • 2 tbsp lime juice
  • ½ tsp red pepper flakes
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp cream cheese

Instructions
  1. Marinate shrimp with lime juice, salt, red pepper flakes, black pepper and garlic powder.

  2. In a large skillet over medium heat, saute shrimp in olive oil about 1 minute each side and remove from heat once cooked.

  3. To make zucchini noodles, use a box grater with the largest grating holes side up. Cut both ends off the zucchini then push it along the top of the grater in order to create long, thin ribbons of zucchini. Turn zucchini over and continue slicing until all the zucchini are in long strips. Throw away the seeds.
  4. Put the zucchini zoodles in a cooking pot with olive oil, cream cheese, salt and pepper and stir-fry the zoodles for about 2-3 minutes on medium-high heat.

  5. Once the zoodles are cooked, add the cooked shrimp in and mix it for 30 seconds and remove from heat.
  6. Serves warm with chopped parsley on top and enjoy!
