Today we are super excited to share with you another fascinating keto success story from Rosalinda Gutierrez. Thanks to the ketogenic way of eating, Rosalinda has lost over 70 lbs and she doesn’t have diabetes and high triglycerides anymore.

Without further ado, here is Rosalinda’s story:


Please tell us your story:

I have been on this journey for almost 2 years, it began with a stroke, when I was recovering my Dr. introduced me to the keto diet to reduce the inflammation in my brain and recovery would be more effective for me!

I trusted and dived in fully from day one! I can still remember my son cooking eggs in the microwave for me the first months because I couldn’t do much my self!

Now I’m 90% recovered and 70 lbs lighter with no diabetes and no more triglycerides! My self-esteem and life are back! My goal today is to help others, especially to introduce Mexican meals in a keto low carb way. Too many Hispanics who will not better their health because they are not willing to give up the traditional dishes they know and love!

How has your life changed since going keto?

My life has changed in so many ways, from chronic fatigue to having so much energy. I began school and no longer rely on the antidepressant. The fibromyalgia and rheumatoid arthritis have been much manageable since I have controlled the inflammation in my body.

What did you personally do in your first 10 days of keto?

The first days I was in the hospital recovering from a stroke, as soon as was able to eat I was put on a strict low carb diet and sugar-free regimen.

On day 12, I was home and from there I began what was new to me: counting macronutrients. Unable to cook, my family would make things for me. I honestly ate mainly egg omelets butter and cream coffee plus a lot of chicken soups and sugar-free jello.

Do you count and track macros strictly?

At the beginning, I religiously counted macros on the app. After that, I pretty much memorized what an ingredient is worth in carbs and simply made meals divide in potions to see how and what I will eat for the day!

Do you exercise? If yes, what’s your workout routine like?

I don’t exercise, but I occasionally go for walks but that’s not daily

Have you ever encountered a plateau? If so, how did you get over it?

Yes, my weight stall lasted about 4 months. On what has worked for me, personally to break a stall, I upped my fats for 2 whole days but going down to almost 0 carbs for those days plus intermittent fasting. Now, remember we all are different and my method may not work for you. For example, I see great results on others with egg fasting but when I tried egg fast, I felt horrible and gained 6 lbs plus I stalled for 4 months!

What is your WHY (your drive/motivation) to keep on track and stay focused?

My great motivation is my health and well-being of me and my loved ones! With this, I hope to help other Hispanics to motivate and see that you can still eat your great meals and have a better life inside out.

What are your favorite ingredients to prepare keto meals?

Fish tacos on Lettuce tortilla are my favorite, pozole just omits the hominy on my plate only. My sub Lettuce wrap sandwich! Of course, cheese crisp to make tostadas, salsas & I make homemade chorizo. Having heavy whipping cream is a huge staple for me.

What are your favorite keto meals/recipes?

Wow, when asked this question I pause a bit, because I don’t meal plan, or make separate meals from my family, or invest in special foods or ingredients as much! I love to keep it as natural simple as possible. I actually work with what I cook for the family! I can make from Asada tacos on a microwave cheese shell (tortilla) to a traditional barbacoa!

Why do you think you are successful in this keto way of eating?

I love that I’m not hungry or get hunger pains as before, if I still get binge attacks because that is a pattern in my life, because of food addictions, I still can’t completely overcome, because it’s in my mind not my stomach & I win By not stressing about it & I eat almost zero carb snack (tangy or spicy) kick the edge off! Always Listen to your body, but don’t do everything it says!

Finally, What advice would you give someone who is just starting out on keto?

My advice is to accept that this a forever lifestyle. Yes, I fail but get on track right away, I don’t sabotage myself by saying I cheated let’s go on a carb rampage! We are human just let that emotional eating faze pass! One important thing that got me through the first 6 months, I repeatedly say to this day, “don’t focus on the restrictions of what you can’t have, but dive in the pool of the possibilities and let your taste buds guide you”
