Ingredients

  • 2 cups Cauliflower
  • 3 tsp butter
  • 1/4 cup sour cream
  • 1 oz Parmesan cheese
  • 1 tbsp coriander
  • 2 tbsp onion chopped
  • chives Optional
  • 1 tsp garlic powder
  • Salt and Pepper

Instructions

  • Chop the washed cauliflower to make small chunks. Soften the pieces by either boiling or steaming for 10 minutes.
  • Drain the water thoroughly and dry the pieces. Transfer to a blender or food processor with all of the remaining ingredients except for the chives. Mix together until smooth and uniform.

  • Move the blended cauliflower to a baking dish. Cook in the oven for 10 minutes.

  • Season with chopped chives and a dash of pepper before serving.
