Use an immersion blender to mix all of the ingredients together. Continue to whisk for 30-60 seconds to obtain a smooth and creamy mixture to your liking.
Transfer the mix to a small saucepan over low heat. Leave to simmer for 10 minutes or more depending on how thick you like your ketchup. Stir occasionally to avoid burning the sauce.
Spoon out a small amount and sample the flavor. Include more vinegar, salt, or sweetener if necessary. Take out from the heat.
Let sit to cool for a few minutes before putting in the fridge to store. The ketchup can be kept up to 2-3 weeks.

This should yield around 20 tablespoons of ketchup, depends on the thickness of the final product after you simmer.
