Divide 12 ham slices between 4 muffin cups or ramekins (brushed with olive oil)
Break an egg into each cup, season with salt and pepper and bake for 20 minutes or until eggs are set.
Serve immediately sprinkled with Grana Padano and chopped parsley.

*You can also add some extra cheddar/mozzarella cheese on top when baking. Some veggies you can add are spinach, and tomato slices. Instead of breaking the whole egg into the cup, you can crack the egg into a bowl and beat it up then pour into the cup to make scrambled egg cups.
