In a bowl combine ricotta, erythritol, egg, lemon juice and zest.
In another bowl mix coconut flour, baking powder, Perfect Keto Unflavored Keto Collagen. Add to ricotta mixture and stir well.
Fold in blueberries.
Heat a skillet over medium heat, add butter and cook pancakes for 4-5 minutes or until bubbly, flip and cook for additional 3 minutes.
Serve pancakes topped with more blueberries, shredded coconut or any other topping of your choice.

*The number of pancakes will depend on the size you choose. This recipe is divided into 3 servings. Most of the carbs come from blueberries and cheese, if you want to reduce carbs, feel free to use less berries.
