In a blender combine ricotta, full-fat Greek yogurt, erythritol, lemon zest, lemon juice, a scoop of Perfect Keto Unflavored Keto Collagen and blend until smooth.
Add some strawberries to the bottom of glass cups, cover them with ricotta mixture, then add another layer of strawberries and a layer of ricotta mixture and continue until everything is used up.
Transfer to a fridge and chill for at least 2 hours. Enjoy!
