Caprese Style Stuffed Portobello Mushrooms

Very easy to make, the Stuffed Portobello Mushrooms could be as an appetizer, addition to you lunch salad or even part of your family dinner.  It takes only 25 min to make before you put it on a table for everyone to enjoy.  To make it you need very few ingredients: Portobello mushrooms, mozzarella cheese, cherry tomato, olive oil and balsamic vinegar.   I didn’t find small or medium size mushrooms so I got one big.

Instructions
  1. Brush mushrooms with olive oil on both sides and along the edges

  2. Cube mozzarella and put it inside the mushrooms
  3. Slice cherry tomatoes in half, mix it with salt and pepper (you can add chopped fresh basil) and put it on top of mozzarella.

  4. Put it in a pre-heated oven for 20 min. Oven Temp 375 F.
  5. Enjoy and can be served with some green mixed salad.
