  • 6 eggs
  • 8 oz cream cheese
  • ½ cup heavy cream
  • ½ cup almond milk (or coconut milk)
  • ½ cup shredded cheese
  • 12 oz zucchini
  • 8 oz Red pepper
  • 3 oz Jalapeno
  • 3 oz onion
  • 2 oz broccoli
  • 4 oz Cauliflower
  • 3 cloves garlic
  • Seasoning of your choice

Instructions
  1. Dice red pepper, jalapeno, onion, broccoli, cauliflower and garlic. Cube Zucchini.
  2. Heat up a bit of oil in a skillet and cook all vegetable till they get a bit soft (not mushy).
  3. In a separate bowl mix softened cream cheese with eggs, heavy cream and almond milk.
  4. Add vegetables to cream cheese mixture, add cheese and seasoning. Mix all together.
  5. If you are using a spring form then cover its bottom with foil, the mixture might seep through the bottom. Cover bottom with parchment paper, spray bottom and sides with oil. Transfer mixture into your form and put in a pre-heated 350F oven for an hour or till it the top is golden brown.
  6. Once done sprinkle a bit of cheese on the top and serve!
