Keto Egg Wraps with Shrimp Salad

Egg wraps are like super-thin omelets and you can fill them with anything you like. This time we made wraps with diced avocado, shrimps, low carb mayonnaise, chili flakes and fresh parsley.

This shrimp salad can be served separately with leafy greens or hard-boiled eggs. This is perfect for breakfast and lunch and even dinner.

It’s best to make your own mayonnaise because most store-bought ones have canola oil or soybean oil, corn syrup, sugar and other fillers. Otherwise, you need to find keto approved mayonnaise such as Primal Kitchen’s Avocado Oil Mayo.

  • 2 tbsp Mayonnaise
  • 2 tbsp fresh parsley chopped

Instructions
  1. Whisk the eggs with salt and pepper. Heat the medium-sized frying pan and melt the butter. Pour in the egg batter and fry until wrap get firm.
  2. In a bowl mix diced avocado with the squeeze of lime juice. Add mayonnaise, red pepper flakes, freshly chopped parsley, shrimps, salt and pepper and mix carefully.

  3. Transfer the salad onto the egg wrap, garnish with chopped parsley and serve.
