Cheesy Cauliflower Breadsticks

The cheesy cauliflower breadsticks are exquisite and easy to prepare. They’re great for snack and if you add extra topping, it can be wonderful for lunch, dinner and even breakfast.

When making this, it is essential to use waxed paper or parchment paper to bake the dough and remove it easily. Also, it is important to mix the mixture by hands using a spoon instead of a blender so we won’t crush the cauliflower mixture. When you finish baking and removing from the oven, let it stand for a few minutes before removing the bread from the waxed paper to avoid breaking it.

Instructions
  1. Wash and dry cauliflower thoroughly then remove all leaves and cut into small florets.
  2. Put these florets inside the food processor and press the button several times with care until the cauliflower florets become rice-sized pieces.
  3. Mix these cauliflower pieces with butter and put in a microwave and use the "cooking" function for a minute and a half to make cauliflower rice.
  4. In a mixing bowl, add cauliflower rice, eggs, 1 cup of mozzarella cheese, almond flour, oregano, rosemary, salt and pepper. Mix everything well using a spoon.

  5. Cover the baking tray with waxed paper and carefully distribute the mixture evenly.

  6. Add the remaining mozzarella cheese (1/2 cup) for topping.

  7. Bake at 300 F for 15 minutes (or depends on how dry/moist you want the topping to be)
  8. When the cheese becomes golden, remove the baking tray from the oven and let it cool for 5 minutes before removing the paper. Enjoy!
