  • 1 tsp fresh lemon juice
  • 1 tsp coriander chopped

Instructions
  1. Use a food processor or a knife and shred the cauliflower into tiny brunoise then put in a microwave-safe container and microwave for three minutes, until the cauliflower becomes tender.

  2. Add olive oil in a non-stick skillet and heat over medium-high heat then add the cauliflower and onion; when the onion is tender remove from heat.
  3. Crack the eggs into a mixing bowl with a pinch of sea salt and black pepper and add the all the ingredients (cauliflower, lemon, coriander and onion).

  4. Mix all the ingredient well to make the tortilla batter.

  5. Spray 8-inch (20 cm) non-stick skillet with cooking spray. Heat over medium-high heat and add the mixture. Fry the tortilla for about 5 minutes on each side; rotate carefully using a spatula.
  6. Transfer to a plate and serve warm or at room temperature.
