Instructions
  1. In a hot pan, brown ground beef with olive oil, minced garlic and onion until fully cooked.
  2. Transfer the meat into a crock pot. Add tomato puree, chopped tomato, chicken broth, herbs (cumin powder, pepper, paprika) or taco seasoning and salt.
  3. Cook on low for 4 hours or high for 2 hours.
  4. Tips for a thicker soup: 30 minutes before serving, add cream cheese and cheddar cheese to the soup and stir. Let it cook for another 30 minutes and turn off the cooker.
  5. For garnish, toast 2 slices of cheddar cheese in a non-stick pan and serve with the hot taco soup. Add coriander on top for extra flavor! Enjoy!
